Ground Turkey-Pumpkin Chili

Ingredients

  • 1½ lb ground turkey
  • 1 (8-oz) pkg tri pepper mix
  • 1 (8-oz) pkg chopped onion
  • 2 Tbsp minced garlic
  • 2 Tbsp olive oil
  • 1½ (1.25-oz) envelopes chili seasoning mix
  • 2 (14.5-oz) cans diced tomatoes
  • 1 (15.5-oz) can cannellini beans, rinsed and drained
  • 1 (15-oz) can pure pumpkin
  • 1 cup less sodium chicken broth
  • ¾ cup shredded Cheddar cheese
  • 6 Tbsp sour cream

Instructions

  1. Cook turkey, pepper mix, onion, and garlic in hot oil in a Dutch oven over medium-high heat 12 minutes. Stir in seasoning mix.
  2. Add tomatoes, beans, pumpkin, and broth; bring to a boil over high heat. Reduce heat, cover and simmer 15 minutes.
  3. Top each serving with cheese and sour cream.
