Sun-Dried Tomato-Parmesan Chicken

Ingredients
- ¾ cup olive-oil mayonnaise
- 1 cup chopped sun-dried tomatoes in oil
- 2 tsp Italian seasoning
- 6 (5-oz) individually wrapped boneless, skinless chicken breasts
- 1 cup freshly grated Parmesan cheese
- 1 (0.5-oz) pkg fresh basil, stems removed
Instructions
- Preheat oven to 425°F. Combine mayonnaise, sun-dried tomatoes, and seasoning in a bowl.
- Arrange chicken on a foil-lined greased baking sheet. Spoon mayonnaise mixture on chicken; sprinkle with cheese.
- Bake 18 to 20 minutes or until chicken is done and topping is hot and bubbly. Sprinkle with basil.

- 2 lb Broccolini
- ⅓ cup water
- ¾ (16-oz) box orzo
- 2 Tbsp butter
Side Dish Instructions
- Cook Broccolini with water, covered, in a microwave-safe dish 4 to 5 minutes or until tender. Drain and season with salt and pepper, if desired.
- Cook orzo according to package directions; drain and toss with butter. Season with salt and pepper, if desired.
