Cajun Beef and Vegetable Meat Loaf

Ingredients

  • 1½ lb ground beef
  • 1 cup finely chopped onion
  • 1 green bell pepper, chopped
  • 1 (8-oz) pkg whole mushrooms, chopped
  • ¼ cup almond flour
  • 2 Tbsp tomato paste
  • 1½ Tbsp Cajun seasoning
  • 2 large eggs, lightly beaten

Instructions

  1. Preheat oven to 425°F. Combine all ingredients in a large bowl; mix until just combined. Shape into a freeform 10- x 5-inch loaf on a lightly greased rack in a broiler pan.
  2. Bake 50 minutes to 1 hour or until center is no longer pink. Cover loosely with foil to prevent overbrowning, if needed.

  • 1½ lb Brussels sprouts, halved
  • 1 large red bell pepper, sliced
  • 2 Tbsp olive oil
  • 2 Tbsp lemon juice
  • 3 cloves garlic, sliced
  • 1 tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together all ingredients on a rimmed baking sheet; spread in a single layer.
  2. Bake 20 minutes or until browned and tender.
