Ingredients

  • 2 lb ground beef
  • 2 large eggs
  • 2 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp pepper
  • 2 (28-oz) cans diced tomatoes
  • 2 (0.5-oz) pkg fresh basil, chopped
  • 1 cup chopped onion

Instructions

  1. Combine beef, eggs, Italian seasoning, salt, and pepper in a large bowl. Shape into 24 (1-inch) meatballs.
  2. Cook meatballs, in batches, in a large skillet over medium-high heat 5 minutes or until browned on all sides. Transfer to a 5- to 7-quart slow cooker. Add tomatoes, basil, and onion.
  3. Cover and cook on LOW 7 hours. Serve meatballs and sauce over Spaghetti Squash recipe.

Side Dish Ingredients

  • 2 (10-oz) pkg frozen spaghetti squash spirals
  • 1 (16-oz) pkg frozen broccoli and cauliflower
  • 1 Tbsp olive oil
  • ¼ tsp kosher salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook squash and broccoli and cauliflower according to package directions.
  2. Place broccoli and cauliflower in a bowl; toss with oil, salt, and pepper.
