Curried Pork Chops
Almond-Raisin "Couscous" and Sugar SnapsIngredients
- 6 (6-oz) boneless pork chops
- 1½ tsp curry powder
- ¾ tsp ground cumin
- ½ tsp salt
- 2 Tbsp olive oil
Instructions
- Sprinkle pork with curry powder, cumin, salt, and pepper, if desired.
- Cook pork in hot oil in a large nonstick skillet over medium heat 4 minutes per side or until done.
Side Dish Ingredients
- 2 (16-oz) pkg cauliflower crumbles
- 3 Tbsp olive oil
- ½ tsp salt
- 2 cloves garlic, minced
- ½ cup sliced almonds
- ½ cup golden raisins
- 2 Tbsp chopped fresh parsley
- 2 (8-oz) pkg sugar snap peas
Side Dish Instructions
- Preheat oven to 425°F. Combine cauliflower, oil, salt, and garlic in a roasting pan. Bake 18 to 20 minutes or until browned, stirring once.
- Meanwhile, toast nuts in a dry skillet over medium-high heat 4 to 6 minutes or until fragrant. Stir nuts, raisins, and parsley into cauliflower mixture.
- Steam peas according to package directions.
