Super Fast Tuna Casserole

Ingredients

  • 3 (8.5-oz) pouches ready elbows pasta
  • 1 (8-oz) container chopped onion
  • 1 cup frozen sweet peas
  • 2 (10.5-oz) cans cream of mushroom soup
  • 1 (4.5-oz) jar sliced mushrooms, drained
  • 2 (5-oz) cans albacore tuna, drained and flaked
  • 2 cups shredded sharp Cheddar cheese, divided
  • ½ (8-oz) pkg classic potato chips, coarsely crushed

Instructions

  1. Preheat broiler. Heat pasta according to package directions.
  2. Meanwhile, cook onion, peas, soup, and mushrooms in a large saucepan over medium heat 5 minutes. Stir in tuna and 1 cup cheese until melted. Stir in hot cooked pasta. Cook 1 minute longer. Season with salt and pepper, if desired.
  3. Spoon mixture into a greased broiler-safe 13- x 9-inch baking dish. Top with chips; sprinkle with 1 cup cheese. Broil on second oven shelf 2 to 3 minutes or until browned.
  4. Serve half of casserole; refrigerate remaining casserole for another meal.

  • 1 Tbsp butter

  1. Steam vegetables according to package directions. Toss with butter; season with salt and pepper, if desired.
