Ingredients
- ¼ cup freshly grated Parmesan cheese
- 2 Tbsp whole wheat panko breadcrumbs
- 2 Tbsp finely chopped fresh basil
- ¼ tsp garlic powder
- ⅛ tsp kosher salt
- ⅛ tsp pepper
- ½ lb tilapia fillets
- 2 Tbsp olive oil mayonnaise
- ½ lemon, cut into wedges
Instructions
- Preheat oven to 400°F. Combine cheese, breadcrumbs, basil, garlic powder, salt, and pepper in a bowl.
- Brush fish with mayonnaise on a parchment paper-lined rimmed baking sheet. Top fish with cheese mixture, pressing gently to adhere.
- Bake 10 minutes or until fish flakes with a fork. Serve with lemon wedges.

- 4 cups spring mix
- ½ small fennel bulb, thinly sliced
- 1 Granny Smith apple, sliced
- ¼ cup pomegranate arils
- 3 Tbsp refrigerated balsamic vinaigrette
- 3 Tbsp freshly shaved Parmesan cheese
- 2 Tbsp chopped walnuts
