Ingredients

  • ¼ cup freshly grated Parmesan cheese
  • 2 Tbsp whole wheat panko breadcrumbs
  • 2 Tbsp finely chopped fresh basil
  • ¼ tsp garlic powder
  • ⅛ tsp kosher salt
  • ⅛ tsp pepper
  • ½ lb tilapia fillets
  • 2 Tbsp olive oil mayonnaise
  • ½ lemon, cut into wedges

Instructions

  1. Preheat oven to 400°F. Combine cheese, breadcrumbs, basil, garlic powder, salt, and pepper in a bowl.
  2. Brush fish with mayonnaise on a parchment paper-lined rimmed baking sheet. Top fish with cheese mixture, pressing gently to adhere.
  3. Bake 10 minutes or until fish flakes with a fork. Serve with lemon wedges.

  • 4 cups spring mix
  • ½ small fennel bulb, thinly sliced
  • 1 Granny Smith apple, sliced
  • ¼ cup pomegranate arils
  • 3 Tbsp refrigerated balsamic vinaigrette
  • 3 Tbsp freshly shaved Parmesan cheese
  • 2 Tbsp chopped walnuts
