Meat Lover's Pizza Soup
Quick Spinach Salad
Ingredients
- ½ (16-oz) pkg ground Italian sausage
- ½ small onion, chopped
- 1 clove garlic, minced
- 2 cups low-sodium chicken broth
- ¾ cup no-salt-added diced tomatoes
- ¾ cup no-salt-added tomato sauce
- 1 Tbsp no-salt-added tomato paste
- ½ (3.5-oz) pkg sliced pepperoni, chopped
- 1 tsp Italian seasoning
- ⅔ cup shredded mozzarella cheese
Instructions
- Cook sausage, onion, and garlic in a Dutch oven 8 to 10 minutes or until sausage is browned and crumbly; drain well, and return to pot.
- Stir in broth, tomatoes, tomato sauce, tomato paste, pepperoni, and Italian seasoning. Bring to a boil; reduce heat, and simmer 20 minutes. Stir in cheese just before serving.
- Refrigerate extra servings for another meal.
Side Dish Ingredients
- 1 (10-oz) pkg baby spinach
- ¼ cup olive oil vinaigrette
- 2 Tbsp freshly grated Parmesan cheese
Side Dish Instructions
- Toss spinach with dressing; sprinkle with cheese.
