Beef and Vegetable Noodle Bowls
Ingredients
- 1 (14-oz) pkg rice noodles
- 1½ lb ground beef
- 1 (8-oz) pkg sliced mushrooms
- 1 onion, sliced
- 2 cups shredded carrots
- 6 Tbsp less sodium soy sauce
- 2 Tbsp sesame oil
- 1 Tbsp honey
- 1 Tbsp brown sugar
- 6 cloves garlic, minced
- 3 green onions, sliced
Instructions
- Cook noodles according to package directions.
- Meanwhile, cook beef in a large skillet over medium-high heat 8 minutes or until browned and crumbly. Drain beef, set aside, and keep warm.
- Cook mushrooms, onion, and carrots in the same skillet over medium-high heat 5 minutes or until tender.
- Stir together soy sauce, oil, honey, brown sugar, and garlic. Add soy sauce mixture and beef to skillet; cook 3 minutes, stirring to coat, or until thoroughly heated. Serve beef and vegetable mixture over noodles; sprinkle with green onions.
