Chicken with Mushroom Gravy
Mashed Potatoes and CarrotsIngredients
- 1½ lb boneless, skinless chicken thighs
- ½ tsp salt
- ½ tsp pepper
- 3 Tbsp olive oil, divided
- 1 (8-oz) pkg sliced mushrooms
- 1 (0.87-oz) envelope gravy mix
- 1 cup water
- 1 (10.5-oz) can cream of mushroom soup
Instructions
- Sprinkle chicken with salt and pepper. Cook chicken in 2 Tbsp hot oil in a large skillet over medium-high heat 5 minutes per side or until done.
- Meanwhile, cook mushrooms in 1 Tbsp hot oil in a saucepan over medium-high heat 6 minutes or until browned. Stir in gravy mix and water; bring to a boil, reduce heat, and simmer 1 minute. Stir in soup; cook 3 minutes or until thoroughly heated.
Side Dish Ingredients
- 1 (32-oz) pkg refrigerated mashed potatoes
- 1 (12-oz) pkg frozen crinkle cut carrots
- 2 Tbsp olive oil
- 1½ tsp Italian seasoning
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cook potatoes and carrots separately according to package directions. Toss together carrots, oil, seasoning, salt, and pepper.
