Chicken with Mushroom Gravy

Ingredients

  • 1½ lb boneless, skinless chicken thighs
  • ½ tsp salt
  • ½ tsp pepper
  • 3 Tbsp olive oil, divided
  • 1 (8-oz) pkg sliced mushrooms
  • 1 (0.87-oz) envelope gravy mix
  • 1 cup water
  • 1 (10.5-oz) can cream of mushroom soup

Instructions

  1. Sprinkle chicken with salt and pepper. Cook chicken in 2 Tbsp hot oil in a large skillet over medium-high heat 5 minutes per side or until done.
  2. Meanwhile, cook mushrooms in 1 Tbsp hot oil in a saucepan over medium-high heat 6 minutes or until browned. Stir in gravy mix and water; bring to a boil, reduce heat, and simmer 1 minute. Stir in soup; cook 3 minutes or until thoroughly heated.

Side Dish Ingredients

  • 1 (32-oz) pkg refrigerated mashed potatoes
  • 1 (12-oz) pkg frozen crinkle cut carrots
  • 2 Tbsp olive oil
  • 1½ tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook potatoes and carrots separately according to package directions. Toss together carrots, oil, seasoning, salt, and pepper.
