Chicken with Roasted Corn Salsa

Ingredients

  • 2 lb boneless, skinless chicken breasts, halved lengthwise
  • 3 zucchini, cut in half lengthwise
  • 2 Tbsp salt-free garlic and herb seasoning
  • 2 (9-oz) pkg frozen seasoned honey-roasted sweet corn
  • 1 (1-oz) pkg fresh basil, thinly sliced

Instructions

  1. Preheat grill or grill pan to medium-high heat. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle chicken and zucchini with seasoning.
  2. Grill chicken, covered, 5 to 6 minutes per side or until done. Grill zucchini, cut sides down, 3 to 4 minutes or until tender; slice.
  3. Meanwhile, cook corn according to package directions; stir in basil. Serve chicken and zucchini with corn mixture.
