One-Pot Taco Chili Mac
Easy Romaine SaladIngredients
- ½ lb lean ground beef
- ½ onion, chopped
- 1 clove garlic, minced
- 1 tsp chili powder
- 1 (14.5-oz) can BPA-free organic diced tomatoes with green chiles
- 1 (14.5-oz) can low-sodium beef broth
- ½ cup water
- ¼ tsp salt
- 4 oz whole-grain elbow macaroni
- 1 cup shredded sharp Cheddar cheese
- ¼ cup chopped fresh cilantro
- 1 green onion, chopped
Instructions
- Cook beef, onion, and garlic in a large, deep skillet over medium heat until beef is browned and crumbly; drain and return to skillet.
- Stir in chili powder, tomatoes, broth, water, and salt. Bring to a boil; add macaroni.
- Cook 10 minutes or until macaroni is tender, stirring occasionally. Sprinkle with cheese; cover and let stand 2 minutes or until cheese is melted. Sprinkle with cilantro and onion.

- 1 (10-oz) pkg chopped romaine lettuce
- 1 organic Roma tomato, chopped
- 1 carrot, shredded
- ¼ cup organic avocado-Ranch dressing
Side Dish Instructions
- Combine lettuce, tomato, and carrot in a large bowl; drizzle with dressing, and toss.
