Ingredients

  • 1 (6.9-oz) pkg chicken-flavored rice mix
  • 1½ Tbsp butter
  • ¾ lb boneless, skinless chicken breasts, cut into bite-size pieces
  • ½ green bell pepper, thinly sliced
  • ½ onion, thinly sliced
  • ½ tsp garlic powder
  • ½ tsp pepper
  • 1 cup shredded mozzarella cheese

Instructions

  1. Prepare rice according to package directions.
  2. Meanwhile, melt butter in a large skillet over medium heat. Add chicken, bell pepper, onion, garlic powder, and pepper; cook, stirring occasionally, 5 to 6 minutes or until chicken is done and vegetables are tender.
  3. Stir rice into chicken mixture. Sprinkle with cheese; cover and cook 2 minutes or until cheese is melted.

  • ¼ cup olive oil vinaigrette

  1. Toss together spinach and vinaigrette in a bowl.
