Sausage-Feta Gnocchi
Quick-Steamed Asparagus
Ingredients
- 1 (16-oz) pkg potato gnocchi
- 1½ Tbsp olive oil
- ½ (16-oz) pkg mild Italian chicken sausage, casings removed
- ⅓ cup white wine
- ¼ cup half-and-half
- 1 clove garlic, minced
- ¼ tsp dried crushed rosemary
- ¼ cup crumbled feta cheese
- 2 Tbsp chopped fresh parsley
Instructions
- Cook gnocchi in hot oil in a large skillet over medium heat 8 minutes or until toasted, stirring occasionally.
- Meanwhile, cook sausage in another skillet over medium-high heat 5 to 6 minutes or until browned and crumbly. Add wine, half-and-half, garlic, and rosemary; cook 4 to 5 minutes or until reduced by half.
- Serve sausage mixture over gnocchi. Sprinkle with cheese, and, if desired, parsley.

- 1 lb asparagus, trimmed
- 2 Tbsp water
Side Dish Instructions
- Combine asparagus and water in a microwave-safe dish; tent with plastic wrap, and microwave at HIGH 3 to 5 minutes or until crisp-tender. Sprinkle lightly with salt and pepper, if desired.
