Sausage-Feta Gnocchi

Quick-Steamed Asparagus

Ingredients

  • 1 (16-oz) pkg potato gnocchi
  • 1½ Tbsp olive oil
  • ½ (16-oz) pkg mild Italian chicken sausage, casings removed
  • ⅓ cup white wine
  • ¼ cup half-and-half
  • 1 clove garlic, minced
  • ¼ tsp dried crushed rosemary
  • ¼ cup crumbled feta cheese
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Cook gnocchi in hot oil in a large skillet over medium heat 8 minutes or until toasted, stirring occasionally.
  2. Meanwhile, cook sausage in another skillet over medium-high heat 5 to 6 minutes or until browned and crumbly. Add wine, half-and-half, garlic, and rosemary; cook 4 to 5 minutes or until reduced by half.
  3. Serve sausage mixture over gnocchi. Sprinkle with cheese, and, if desired, parsley.

  • 1 lb asparagus, trimmed
  • 2 Tbsp water

Side Dish Instructions

  1. Combine asparagus and water in a microwave-safe dish; tent with plastic wrap, and microwave at HIGH 3 to 5 minutes or until crisp-tender. Sprinkle lightly with salt and pepper, if desired.
