Sweet and Spicy Pork Medallions
Quick Napa Cabbage and Carrot Sauté

Ingredients
- 3 Tbsp fresh lime juice
- 3 Tbsp honey
- 2 Tbsp rice vinegar
- 2 Tbsp dark sesame oil
- 2 tsp Sriracha hot sauce
- 2 Tbsp fish sauce
- 1½ lb pork tenderloins, trimmed
- ¼ tsp salt
- ½ tsp pepper
- ¼ cup chopped fresh cilantro
Instructions
- Whisk together lime juice, honey, vinegar, oil, Sriracha, and, if desired, fish sauce.
- Cut pork into ½-inch-thick medallions. Sprinkle pork with salt and pepper. Brush half of honey mixture over pork. Reserve remaining mixture. Sear pork in a large nonstick skillet coated with cooking spray over medium-high heat 3 minutes per side or until done.
- Drizzle pork with reserved sauce; sprinkle with cilantro, if desired.

- 2 large carrots
- 1 small head napa cabbage, shredded
- ½ cup chopped green onions
- 1 clove garlic, minced
- 2 Tbsp dark sesame oil
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Peel carrots into long thin ribbons using a vegetable peeler.
- Cook carrots, cabbage, onions, and garlic in hot oil in a large skillet over medium-high heat 3 to 4 minutes or until just tender. Sprinkle with salt and pepper.
