Ham, Pear, and Arugula Wraps

Ingredients

  • 2 cups baby arugula
  • 2 tsp olive oil
  • 1 tsp fresh lemon juice
  • 4 low carb whole wheat tortillas
  • 4 tsp honey mustard
  • ½ lb thin deli sliced low sodium ham
  • 2 pears, thinly sliced

Instructions

  1. Toss together arugula, oil, and lemon juice.
  2. Arrange tortillas on a flat work surface. Spread with mustard; top with ham, pears and arugula. Roll up; secure with toothpicks.

Side Dish Ingredients

  • 4 tangerines
  • 4 Tbsp sliced almonds

Side Dish Instructions

  1. Peel and section tangerines. Sprinkle with almonds.
