Ingredients

  • ¾ cup pearled farro
  • 1 (8-oz) pkg microwaveable quinoa
  • 1 Tbsp olive oil
  • 1 tsp apple cider vinegar 
  • ¼ tsp salt
  • ¼ tsp pepper 
  • 2 cups baby arugula 
  • 1 apple, chopped
  • 1 cup pomegranate seeds
  • ½ cup chopped celery 
  • ½ cup chopped red onion 
  • ⅓ cup chopped pistachios

Instructions

  1. Prepare farro and quinoa according to package directions; transfer to a large bowl. Cool 5 minutes.
  2. Meanwhile, whisk together oil, vinegar, salt, and pepper in a small bowl.
  3. Add arugula, apple, pomegranate, celery, onion, and nuts to grains. Drizzle with dressing; toss.
