Ancient Grains Salad
Ingredients
- ¾ cup pearled farro
- 1 (8-oz) pkg microwaveable quinoa
- 1 Tbsp olive oil
- 1 tsp apple cider vinegar
- ¼ tsp salt
- ¼ tsp pepper
- 2 cups baby arugula
- 1 apple, chopped
- 1 cup pomegranate seeds
- ½ cup chopped celery
- ½ cup chopped red onion
- ⅓ cup chopped pistachios
Instructions
- Prepare farro and quinoa according to package directions; transfer to a large bowl. Cool 5 minutes.
- Meanwhile, whisk together oil, vinegar, salt, and pepper in a small bowl.
- Add arugula, apple, pomegranate, celery, onion, and nuts to grains. Drizzle with dressing; toss.
