Pancake Tacos

Ingredients
- 1½ cups whole grain pancake mix
- 1¼ cups water
- 1 large egg
- 1½ Tbsp canola oil
- ¾ cup whole milk plain Greek yogurt
- 1 Tbsp honey
- 1 (6-oz) pkg raspberries
- 1 (6-oz) pkg blackberries
Instructions
- Whisk together pancake mix, water, egg, and oil.
- Cook batter, in ¼ cupfuls, in a large nonstick skillet coated in cooking spray 1 to 2 minutes per side or until done.
- Combine yogurt and honey in a small bowl. Spoon yogurt down middle of each pancake; top with berries. Fold pancakes taco-style to serve.
