Pancake Tacos

Ingredients

  • 1½ cups whole grain pancake mix
  • 1¼ cups water
  • 1 large egg
  • 1½ Tbsp canola oil
  • ¾ cup whole milk plain Greek yogurt
  • 1 Tbsp honey
  • 1 (6-oz) pkg raspberries
  • 1 (6-oz) pkg blackberries

Instructions

  1. Whisk together pancake mix, water, egg, and oil.
  2. Cook batter, in ¼ cupfuls, in a large nonstick skillet coated in cooking spray 1 to 2 minutes per side or until done.
  3. Combine yogurt and honey in a small bowl. Spoon yogurt down middle of each pancake; top with berries. Fold pancakes taco-style to serve.
