Dirty Rice Cauliflower Bowls
Ingredients
- 1 (10-oz) pkg frozen riced cauliflower
- 2 Tbsp melted butter, divided
- 1 Tbsp olive oil
- ⅓ cup chopped red bell pepper
- ⅓ cup chopped onion
- ⅓ cup chopped celery
- ¾ lb ground pork sausage
- 1 tsp Cajun seasoning
- 1 green onion, chopped
Instructions
- Cook cauliflower rice according to package directions; drain and drizzle with 1 Tbsp butter.
- Meanwhile, heat oil with 1 Tbsp butter in a skillet over medium-high heat. Add bell pepper, onion, and celery; cook 3 to 5 minutes or until vegetables are tender.
- Add sausage and seasoning; cook 5 to 6 minutes or until sausage is browned and crumbly. Stir in cauliflower; cook 3 minutes or until browned; stir in green onion.
