Dirty Rice Cauliflower Bowls

Ingredients

  • 1 (10-oz) pkg frozen riced cauliflower
  • 2 Tbsp melted butter, divided
  • 1 Tbsp olive oil
  • ⅓ cup chopped red bell pepper
  • ⅓ cup chopped onion
  • ⅓ cup chopped celery
  • ¾ lb ground pork sausage
  • 1 tsp Cajun seasoning
  • 1 green onion, chopped

Instructions

  1. Cook cauliflower rice according to package directions; drain and drizzle with 1 Tbsp butter.
  2. Meanwhile, heat oil with 1 Tbsp butter in a skillet over medium-high heat. Add bell pepper, onion, and celery; cook 3 to 5 minutes or until vegetables are tender.
  3. Add sausage and seasoning; cook 5 to 6 minutes or until sausage is browned and crumbly. Stir in cauliflower; cook 3 minutes or until browned; stir in green onion.
