Ingredients
- 3 slices bacon
- 3 (6-oz) boneless, skinless chicken breasts
- ½ (1-oz) envelope Ranch dressing mix
- 2 oz cream cheese, softened
- ½ cup fresh pico de gallo, drained
- ½ cup shredded Cheddar cheese
- 1 green onion, sliced
Instructions
- Preheat broiler. Cook bacon in a large skillet over medium-high heat 6 to 8 minutes or until crisp. Drain, reserving 1 Tbsp drippings in skillet. Crumble bacon.
- Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle chicken with Ranch dressing mix.
- Add chicken to drippings in skillet. Cook over medium-high heat 5 to 6 minutes per side or until done.
- Transfer chicken to a 9-inch baking dish. Stir together cream cheese and pico de gallo. Top chicken with cream cheese mixture and Cheddar.
- Broil 2 minutes or until cheese melts. Sprinkle with crumbled bacon and onion.

- ¼ tsp garlic powder
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Arrange asparagus in a steamer basket over boiling water. Cover and steam 5 minutes or until crisp-tender.
- Toss asparagus with oil, garlic powder, salt, and pepper.
