Ingredients

  • 3 slices bacon
  • 3 (6-oz) boneless, skinless chicken breasts
  • ½ (1-oz) envelope Ranch dressing mix
  • 2 oz cream cheese, softened
  • ½ cup fresh pico de gallo, drained
  • ½ cup shredded Cheddar cheese
  • 1 green onion, sliced

Instructions

  1. Preheat broiler. Cook bacon in a large skillet over medium-high heat 6 to 8 minutes or until crisp. Drain, reserving 1 Tbsp drippings in skillet. Crumble bacon.
  2. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle chicken with Ranch dressing mix.
  3. Add chicken to drippings in skillet. Cook over medium-high heat 5 to 6 minutes per side or until done.
  4. Transfer chicken to a 9-inch baking dish. Stir together cream cheese and pico de gallo. Top chicken with cream cheese mixture and Cheddar.
  5. Broil 2 minutes or until cheese melts. Sprinkle with crumbled bacon and onion.

  • 1 Tbsp olive oil
  • ¼ tsp garlic powder
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Arrange asparagus in a steamer basket over boiling water. Cover and steam 5 minutes or until crisp-tender.
  2. Toss asparagus with oil, garlic powder, salt, and pepper.
