Turkey-Bacon Mac and Cheese

Ingredients

  • 1 (16-oz) pkg elbow macaroni
  • 8 slices bacon, chopped
  • 2 Tbsp butter
  • ⅓ cup all purpose flour
  • 2 cups milk
  • 2 cups less sodium chicken broth
  • 1 (8-oz) block mozzarella cheese, shredded
  • 3 cups chopped oven roasted turkey breast
  • 1 (8-oz) block Cheddar cheese, shredded and divided

Instructions

  1. Preheat oven to 350°F. Cook pasta according to package directions.
  2. Meanwhile, cook bacon in a large Dutch oven over medium heat until crisp; drain on paper towels, reserving 2 Tbsp drippings in pot.
  3. Melt butter with drippings in pot; whisk in flour, and cook, whisking constantly, 2 minutes. Gradually whisk in milk and broth; cook, whisking occasionally, until thickened and bubbly. Remove from heat, and whisk in mozzarella until melted.
  4. Stir in cooked pasta and turkey into sauce. Spoon half of pasta mixture into a lightly greased 3-quart baking dish. Top with 1 cup Cheddar. Spoon remaining pasta mixture over cheese.
  5. Bake 25 minutes or until hot and bubbly; sprinkle with 1 cup Cheddar and crispy bacon. Bake 5 minutes longer or until cheese is melted.

  • 1 (10-oz) pkg chopped romaine lettuce
  • 1 (16-oz) pkg strawberries, sliced
  • 2 Honeycrisp apples, chopped
  • ½ cup balsamic vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a large bowl just before serving.
