Turkey-Bacon Mac and Cheese
Strawberry-Apple Romaine Salad
Ingredients
- 1 (16-oz) pkg elbow macaroni
- 8 slices bacon, chopped
- 2 Tbsp butter
- ⅓ cup all purpose flour
- 2 cups milk
- 2 cups less sodium chicken broth
- 1 (8-oz) block mozzarella cheese, shredded
- 3 cups chopped oven roasted turkey breast
- 1 (8-oz) block Cheddar cheese, shredded and divided
Instructions
- Preheat oven to 350°F. Cook pasta according to package directions.
- Meanwhile, cook bacon in a large Dutch oven over medium heat until crisp; drain on paper towels, reserving 2 Tbsp drippings in pot.
- Melt butter with drippings in pot; whisk in flour, and cook, whisking constantly, 2 minutes. Gradually whisk in milk and broth; cook, whisking occasionally, until thickened and bubbly. Remove from heat, and whisk in mozzarella until melted.
- Stir in cooked pasta and turkey into sauce. Spoon half of pasta mixture into a lightly greased 3-quart baking dish. Top with 1 cup Cheddar. Spoon remaining pasta mixture over cheese.
- Bake 25 minutes or until hot and bubbly; sprinkle with 1 cup Cheddar and crispy bacon. Bake 5 minutes longer or until cheese is melted.

- 1 (10-oz) pkg chopped romaine lettuce
- 1 (16-oz) pkg strawberries, sliced
- 2 Honeycrisp apples, chopped
- ½ cup balsamic vinaigrette
Side Dish Instructions
- Toss together all ingredients in a large bowl just before serving.
