Ingredients

  • 1 (18-oz) pkg refrigerated cheese ravioli
  • 1 (24-oz) jar marinara sauce
  • 1½ cups shredded mozzarella cheese, divided
  • ½ cup low sodium vegetable broth
  • ¼ cup freshly grated Parmesan cheese
  • ¼ cup chopped fresh basil

Instructions

  1. Preheat oven to 400°F. Stir together ravioli, marinara sauce, ¾ cup mozzarella, and broth in a large bowl; spoon into a lightly greased 11- x 7-inch baking dish.
  2. Sprinkle with remaining ¾ cup mozzarella.
  3. Cover and bake 30 minutes. Uncover and bake 10 minutes longer or until hot and bubbly. Sprinkle with Parmesan and basil.

  • 6 cups chopped kale
  • 2 Roma tomatoes, cut into chunks
  • ¼ cup olive oil vinaigrette
  • ¼ cup pine nuts
  • ¼ cup freshly grated Parmesan cheese
  • ½ tsp crushed red pepper
