Southwest Pork Chops

Ingredients

  • 1½ lb boneless pork chops
  • 1 tsp salt free Southwest seasoning
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil, divided
  • 1 red bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 2 Tbsp all purpose flour
  • 2 cups less sodium chicken broth

Instructions

  1. Sprinkle pork with seasoning, salt, and pepper. Cook pork, in batches if necessary, in 1 Tbsp hot oil in a large skillet over medium-high heat 2 to 3 minutes per side or until browned. Remove from skillet; keep warm.
  2. Add bell pepper, onion, and 1 Tbsp oil to pan; cook 6 to 8 minutes or until lightly browned and tender. Sprinkle flour over vegetables; cook 2 minutes. Stir in broth.
  3. Return pork to skillet; cook 8 to 10 minutes or until sauce thickens and pork is done.

Side Dish Ingredients

  • 3 (3.5-oz) pouches boil in bag brown rice
  • 1 (15-oz) can black beans, rinsed and drained
  • ⅓ cup chopped fresh cilantro
  • 1 tsp lime zest
  • 2 Tbsp lime juice
  • ¼ tsp salt

Side Dish Instructions

  1. Cook rice according to package directions. Toss with beans, cilantro, lime zest, lime juice, and salt in a bowl.
