Turkey-Stuffed Cabbage Rolls

Ingredients

  • 12 large cabbage leaves
  • 2 lb lean ground turkey
  • 2 Tbsp olive oil, divided
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (14.5-oz) can no salt added fire roasted diced tomatoes, drained
  • 2 Tbsp chopped fresh parsley
  • 1 (12-oz) jar reduced sodium pizza sauce, heated

Instructions

  1. Steam cabbage in a steamer basket over boiling water 2 to 4 minutes or until tender.
  2. Cook turkey in 1 Tbsp hot oil in a large skillet 10 to 12 minutes or until crumbly and no longer pink; drain. Remove from skillet.
  3. Add 1 Tbsp oil, onion, garlic, salt, and pepper to skillet; cook 4 minutes. Add tomatoes; cook 4 minutes or until onion is tender. Stir in turkey and parsley.
  4. Spoon turkey mixture down center of each cabbage leaf. Roll up; place, seam sides down, on a platter. Pour sauce over rolls.

  • 1 cup whole wheat couscous
  • 2 Tbsp chopped fresh parsley
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook couscous according to package directions. Toss with remaining ingredients.
