Turkey-Stuffed Cabbage Rolls
Fresh Herb Couscous
Ingredients
- 12 large cabbage leaves
- 2 lb lean ground turkey
- 2 Tbsp olive oil, divided
- 1 large onion, chopped
- 3 cloves garlic, minced
- ½ tsp salt
- ½ tsp pepper
- 1 (14.5-oz) can no salt added fire roasted diced tomatoes, drained
- 2 Tbsp chopped fresh parsley
- 1 (12-oz) jar reduced sodium pizza sauce, heated
Instructions
- Steam cabbage in a steamer basket over boiling water 2 to 4 minutes or until tender.
- Cook turkey in 1 Tbsp hot oil in a large skillet 10 to 12 minutes or until crumbly and no longer pink; drain. Remove from skillet.
- Add 1 Tbsp oil, onion, garlic, salt, and pepper to skillet; cook 4 minutes. Add tomatoes; cook 4 minutes or until onion is tender. Stir in turkey and parsley.
- Spoon turkey mixture down center of each cabbage leaf. Roll up; place, seam sides down, on a platter. Pour sauce over rolls.

- 1 cup whole wheat couscous
- 2 Tbsp chopped fresh parsley
- 1 Tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook couscous according to package directions. Toss with remaining ingredients.
