Banana-Chocolate Chip Breakfast Cookies
Ingredients
- 1⅓ cups whole wheat flour
- 1 cup old fashioned oats
- 1 tsp ground cinnamon
- ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 2 bananas
- ⅓ cup maple syrup
- ⅓ cup almond butter
- 2 Tbsp canola oil
- 1 large egg
- ¾ cup semisweet chocolate chips
Instructions
- Preheat oven to 350°F. Whisk together flour, oats, cinnamon, baking powder, baking soda, and salt in a large bowl.
- Mash bananas in a separate bowl; stir in syrup, almond butter, and oil until blended; whisk in egg.
- Stir banana mixture into flour mixture until just combined. Fold in chocolate chips.
- Drop batter by ¼ to ⅓ cupfuls onto a parchment paper-lined baking sheet to make 10 cookies. Bake 22 to 25 minutes or until cookies are set and golden; cool 2 minutes on baking sheet.
