Banana-Chocolate Chip Breakfast Cookies

Ingredients

  • 1⅓ cups whole wheat flour
  • 1 cup old fashioned oats
  • 1 tsp ground cinnamon
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 bananas
  • ⅓ cup maple syrup
  • ⅓ cup almond butter
  • 2 Tbsp canola oil
  • 1 large egg
  • ¾ cup semisweet chocolate chips

Instructions

  1. Preheat oven to 350°F. Whisk together flour, oats, cinnamon, baking powder, baking soda, and salt in a large bowl.
  2. Mash bananas in a separate bowl; stir in syrup, almond butter, and oil until blended; whisk in egg.
  3. Stir banana mixture into flour mixture until just combined. Fold in chocolate chips.
  4. Drop batter by ¼ to ⅓ cupfuls onto a parchment paper-lined baking sheet to make 10 cookies. Bake 22 to 25 minutes or until cookies are set and golden; cool 2 minutes on baking sheet.
