Roast Beef Sandwiches with Pesto Mayo
Apple and Blueberry TossIngredients
- ¼ cup reduced fat mayonnaise
- 2 Tbsp pesto
- 8 (1-oz) slices whole grain bread
- ½ lb deli sliced low sodium roast beef
- 2 Roma tomatoes, sliced
- 1 cup baby spinach
Instructions
- Combine mayonnaise and pesto in a small bowl. Spread pesto mayonnaise on bread slices; top with roast beef, tomatoes, spinach, and remaining bread slices to assemble sandwiches.
