Wild-and-Brown Rice Salad

Ingredients

  • 2 (8.5-oz) pouches microwavable brown and wild rice
  • 1½ cups frozen shelled edamame
  • ¼ cup chopped pecans
  • ⅓ cup unsweetened dried cranberries
  • 2 stalks celery, finely diced
  • 2 green onions, chopped
  • 2 Tbsp fresh orange juice
  • 2 Tbsp apple cider vinegar
  • 2 Tbsp extra virgin olive oil
  • 1 tsp honey
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Prepare rice and edamame according to package directions.
  2. Toast nuts in a dry skillet over medium-high heat 3 to 4 minutes or until golden and fragrant.
  3. Combine rice, edamame, nuts, cranberries, celery, and onions in a large bowl.
  4. Whisk together orange juice, vinegar, oil, honey, salt, and pepper. Pour over rice mixture; toss.
