Asian Noodle and Chicken Salad

Ingredients

  • 6 oz soba noodles
  • 1 (8-oz) pkg sugar snap peas
  • 1 red bell pepper, cut into thin strips
  • 1½ cups shredded rotisserie chicken
  • 2 carrots, grated
  • 3 Tbsp low sodium soy sauce
  • 3 Tbsp rice vinegar
  • 1 Tbsp honey
  • 1 Tbsp sesame oil
  • 2 cloves garlic, minced
  • ¼ tsp ground ginger
  • ⅛ tsp crushed red pepper

Instructions

  1. Cook noodles according to package directions, adding peas and bell pepper during last 2 minutes of cooking.
  2. Drain; rinse under cold water to cool.
  3. Combine chicken, carrots, and noodle mixture in a large bowl. Whisk together soy sauce and remaining ingredients. Pour over noodle mixture; toss. Chill until ready to serve.
