Flank Steak with Herbed Charred Corn
Blue Cheese Mashed PotatoesIngredients
- ¾ lb flank steak
- ¼ tsp salt
- ¼ tsp pepper
- 1½ Tbsp olive oil, divided
- ½ (12-oz) pkg frozen corn kernels
- ½ shallot, diced
- 2 Tbsp chopped fresh dill
- 2 Tbsp chopped fresh chives
Instructions
- Sprinkle steak with salt and pepper. Cook steak in 1 Tbsp hot oil in a cast-iron skillet or grill pan over medium-high heat 4 to 5 minutes per side or to desired doneness. Remove from skillet. Let rest 5 minutes before thinly slicing across the grain.
- Cook corn and shallot in ½ Tbsp hot oil in same skillet over medium-high heat 8 minutes or until browned. Stir in dill and chives. Serve with steak.

- ¼ cup crumbled blue cheese

- Cook potatoes according to package directions. Stir in cheese.
