Flank Steak with Herbed Charred Corn

Ingredients

  • ¾ lb flank steak
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1½ Tbsp olive oil, divided
  • ½ (12-oz) pkg frozen corn kernels
  • ½ shallot, diced
  • 2 Tbsp chopped fresh dill
  • 2 Tbsp chopped fresh chives

Instructions

  1. Sprinkle steak with salt and pepper. Cook steak in 1 Tbsp hot oil in a cast-iron skillet or grill pan over medium-high heat 4 to 5 minutes per side or to desired doneness. Remove from skillet. Let rest 5 minutes before thinly slicing across the grain.
  2. Cook corn and shallot in ½ Tbsp hot oil in same skillet over medium-high heat 8 minutes or until browned. Stir in dill and chives. Serve with steak.

  • ½ (24-oz) pkg refrigerated mashed potatoes
  • ¼ cup crumbled blue cheese

  1. Cook potatoes according to package directions. Stir in cheese.
