Turkey-Stuffed Cabbage Rolls

Ingredients

  • 4 large cabbage leaves
  • ¾ lb lean ground turkey
  • 2 tsp olive oil, divided
  • ½ onion, chopped
  • 1 clove garlic, minced
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ (14.5-oz) can no salt added fire roasted diced tomatoes, drained
  • 2 Tbsp chopped fresh parsley
  • ½ cup reduced sodium pizza sauce, heated

Instructions

  1. Steam cabbage in a steamer basket over boiling water 2 to 4 minutes or until tender.
  2. Cook turkey in 1 tsp hot oil in a skillet 10 to 12 minutes or until crumbly and no longer pink; drain. Remove from skillet.
  3. Add 1 tsp oil, onion, garlic, salt, and pepper to skillet; cook 4 minutes. Add tomatoes; cook 4 minutes or until onion is tender. Stir in turkey and parsley.
  4. Spoon turkey mixture down center of each cabbage leaf. Roll up; place, seam sides down, on a platter. Pour sauce over rolls.

Side Dish Ingredients

  • ⅓ cup whole wheat couscous
  • 1 Tbsp chopped fresh parsley
  • ½ Tbsp olive oil
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Cook couscous according to package directions. Toss with remaining ingredients.
