Basil-Butter Chicken and Tomatoes

Ingredients

  • 6 (6-oz) boneless, skinless chicken breasts
  • 1 Tbsp lemon pepper seasoning
  • 6 Tbsp butter, softened and divided
  • 2 pints grape tomatoes
  • 2 Tbsp minced fresh basil

Instructions

  1. Preheat oven to 400°F. Sprinkle chicken all over with seasoning. Melt 2 Tbsp butter in a large ovenproof skillet over medium-high heat. Add chicken to skillet, and cook 3 minutes per side or until browned.
  2. Add tomatoes to skillet. Transfer skillet to oven, and bake 15 minutes or until chicken is done and tomatoes begin to burst.
  3. Meanwhile, stir together 4 Tbsp butter and basil. Dollop butter mixture over chicken.

  • 3 (8-oz) pkg thin green beans
  • 1 lemon
  • 1½ Tbsp olive oil
  • 1 Tbsp minced garlic
  • ¼ tsp pepper

Side Dish Instructions

  1. Steam green beans according to package directions; place in a large bowl. Grate zest and squeeze juice from lemon over beans. Add oil, garlic, and pepper; toss.
