Ingredients

  • 1½ lb ground beef
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • ¼ cup tomato paste
  • 2 (32-oz) cartons less sodium beef broth
  • 2 (14.5-oz) cans petite diced tomatoes with basil, garlic, and oregano
  • ½ cup barbecue sauce
  • 2 tsp dry mustard
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1 tsp pepper
  • 1 (1.5-lb) bag baby red potatoes, quartered
  • 1 (10-oz) pkg frozen mixed vegetables

Instructions

  1. Cook beef, onion, and garlic in a large Dutch oven over medium-high heat until beef is browned and crumbly. Drain and return to pot. Add tomato paste; cook 2 minutes, stirring constantly.
  2. Add broth, tomatoes, barbecue sauce, dry mustard, Italian seasoning, salt, and pepper to pot. Bring to a boil, reduce heat, and simmer 10 minutes.
  3. Stir in potatoes and cook 10 to 15 minutes or until potatoes are tender. Add vegetables, and cook 5 minutes longer or until thoroughly heated.
