Jalapeño BLT Sandwich

Ingredients

  • 12 slices center cut bacon
  • 6 ciabatta rolls
  • 6 oz ⅓ less fat cream cheese, softened
  • 2 green onions, thinly sliced
  • 3 Tbsp pickled diced jalapeño, well drained
  • 1 tsp garlic powder
  • 3 Roma tomatoes, sliced
  • 1 cup baby spinach

Instructions

  1. Cook bacon in a large skillet over medium heat 6 to 8 minutes or until crisp.
  2. Meanwhile, warm or toast ciabatta. Combine cream cheese, green onion, jalapeño, and garlic powder. Spread cream cheese mixture on ciabatta.
  3. Top with bacon, tomatoes, and spinach.

  • 1½ (20-oz) pkg frozen sweet potato fries
  • ¼ cup chopped fresh parsley

Side Dish Instructions

  1. Bake fries according to package directions. Sprinkle with parsley.
