Green Onion Basmati Rice and Spinach

Ingredients

  • 2 lb boneless, skinless chicken thighs
  • ½ tsp salt
  • ½ tsp pepper
  • 1 Tbsp olive oil
  • 1 orange, halved
  • ¼ cup less sodium soy sauce
  • 1½ Tbsp sesame oil
  • 1 Tbsp grated ginger
  • 1 Tbsp honey
  • 2 green onions, thinly sliced

Instructions

  1. Sprinkle chicken with salt and pepper. Cook chicken, in batches, in hot olive oil in a large skillet over medium-high heat 3 to 4 minutes per side. Remove chicken from skillet; keep warm.
  2. Place orange halves, cut sides down, in skillet; cook 2 to 3 minutes or until browned.
  3. Squeeze juice from orange halves into skillet. Add soy sauce, sesame oil, ginger, and honey to skillet. Cook 2 minutes or until thickened. Add chicken; cook 2 minutes or until chicken is coated and done. Sprinkle with onions.

  • 2 (8.5-oz) pouches microwavable brown basmati rice
  • 2 green onions, sliced
  • 1 (6-oz) pkg baby spinach, sliced
  • 2 Tbsp less sodium soy sauce
  • 1 Tbsp sesame oil

Side Dish Instructions

  1. Cook rice according to package directions. Toss with onions in a bowl.
  2. Meanwhile, cook spinach and soy sauce in hot oil in a large skillet 2 minutes or just until wilted.
