Chicken-Bacon Ranch Fries

Ingredients

  • ½ (32-oz) pkg frozen gluten free French fries
  • ½ (1-oz) envelope gluten free Ranch dressing mix
  • 1½ tsp olive oil
  • 1 Tbsp butter
  • ¾ lb boneless, skinless chicken breasts, cut into bite size pieces
  • 1½ tsp minced garlic
  • 1 cup shredded colby Jack cheese
  • 3 slices fully cooked bacon, chopped
  • 1 green onion, thinly sliced
  • 3 Tbsp Ranch dressing

Instructions

  1. Toss together fries, 1 Tbsp dressing mix, and oil on a rimmed baking sheet; spread in a single layer. Bake fries according to package directions.
  2. Meanwhile, melt butter in a large nonstick skillet over medium heat; add chicken and garlic. Cook, stirring occasionally, until chicken is done.
  3. Remove fries from oven. Reduce oven temperature to 350°F. Top fries with ½ cup cheese, chicken, ½ cup cheese, and bacon.
  4. Bake 5 minutes or until cheese melts. Sprinkle with onion, and drizzle with dressing.
