Ingredients

  • ½ lb peeled and deveined, medium size raw shrimp
  • ¼ cup panko breadcrumbs
  • ¼ cup finely chopped red bell pepper
  • 2½ Tbsp mayonnaise, divided
  • ¼ tsp ground cumin
  • 1 green onion, chopped
  • 1 large egg yolk
  • ½ tsp Creole seasoning
  • ¼ tsp pepper
  • ⅛ tsp salt
  • 2 hamburger buns
  • 1 Roma tomato, sliced
  • 2 iceberg lettuce leaves

Instructions

  1. Pulse shrimp in a food processor until minced. Combine shrimp, breadcrumbs, bell pepper, 2 Tbsp mayonnaise, cumin, green onion, and egg yolk; stir until blended.
  2. Gently shape into 2 patties; sprinkle with seasoning, pepper, and salt; cover and chill patties 2 hours or until slightly firm.
  3. Cook patties in a nonstick skillet coated with cooking spray over medium heat 4 to 5 minutes per side or until done. Shrimp will turn pink and firm up.
  4. Serve patties on buns with remaining mayonnaise, tomato, and lettuce.

  • 1½ tsp balsamic vinegar
  • 1 tsp olive oil
  • ¼ tsp Dijon mustard
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 tomato, cut into wedges
  • 1 English cucumber, cut into half moons

Side Dish Instructions

  1. Whisk together vinegar, oil, mustard, salt, and pepper in a bowl. Add tomato and cucumber; toss.
