Shrimp Burgers

Ingredients
- ½ lb peeled and deveined, medium size raw shrimp
- ¼ cup panko breadcrumbs
- ¼ cup finely chopped red bell pepper
- 2½ Tbsp mayonnaise, divided
- ¼ tsp ground cumin
- 1 green onion, chopped
- 1 large egg yolk
- ½ tsp Creole seasoning
- ¼ tsp pepper
- ⅛ tsp salt
- 2 hamburger buns
- 1 Roma tomato, sliced
- 2 iceberg lettuce leaves
Instructions
- Pulse shrimp in a food processor until minced. Combine shrimp, breadcrumbs, bell pepper, 2 Tbsp mayonnaise, cumin, green onion, and egg yolk; stir until blended.
- Gently shape into 2 patties; sprinkle with seasoning, pepper, and salt; cover and chill patties 2 hours or until slightly firm.
- Cook patties in a nonstick skillet coated with cooking spray over medium heat 4 to 5 minutes per side or until done. Shrimp will turn pink and firm up.
- Serve patties on buns with remaining mayonnaise, tomato, and lettuce.

- 1 tsp olive oil
- ¼ tsp Dijon mustard
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 tomato, cut into wedges
- 1 English cucumber, cut into half moons
Side Dish Instructions
- Whisk together vinegar, oil, mustard, salt, and pepper in a bowl. Add tomato and cucumber; toss.
