Ingredients

  • 1 onion, chopped
  • 1 Tbsp olive oil
  • 1 (12.5-oz) jar tikka masala simmer sauce
  • 1 (10.8-oz) pkg frozen Italian vegetable blend
  • 2 (15-oz) cans chickpeas, rinsed and drained
  • 1 (14.5-oz) can fire roasted diced tomatoes, drained
  • ¼ tsp salt

Instructions

  1. Cook onion in hot oil in a large, deep skillet over medium-high heat 5 minutes, stirring occasionally. Add tikka masala sauce, vegetable blend, chickpeas, tomatoes, and salt.
  2. Bring to a boil; reduce heat to low and simmer 10 to 15 minutes or until vegetables are thoroughly heated and sauce is slightly thickened.
  3. Serve over Coriander Basmati Rice recipe.

  • 3 (8.5-oz) pouches microwavable basmati rice
  • 1 Tbsp chopped fresh cilantro
  • ¼ tsp salt
  • ⅛ tsp ground coriander
