Ingredients
- 1 onion, chopped
- 1 Tbsp olive oil
- 1 (12.5-oz) jar tikka masala simmer sauce
- 1 (10.8-oz) pkg frozen Italian vegetable blend
- 2 (15-oz) cans chickpeas, rinsed and drained
- 1 (14.5-oz) can fire roasted diced tomatoes, drained
- ¼ tsp salt
Instructions
- Cook onion in hot oil in a large, deep skillet over medium-high heat 5 minutes, stirring occasionally. Add tikka masala sauce, vegetable blend, chickpeas, tomatoes, and salt.
- Bring to a boil; reduce heat to low and simmer 10 to 15 minutes or until vegetables are thoroughly heated and sauce is slightly thickened.
- Serve over Coriander Basmati Rice recipe.

- 3 (8.5-oz) pouches microwavable basmati rice
- 1 Tbsp chopped fresh cilantro
- ¼ tsp salt
- ⅛ tsp ground coriander
