Chicken Thighs with Dill Hummus Sauce

Ingredients
- 2 lb boneless, skinless chicken thighs
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- 1 (10-oz) pkg plain hummus
- ¼ cup lemon juice
- 2 Tbsp fresh chopped dill
- 4 cloves garlic, minced
- ⅓ cup water
Instructions
- Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side or until done.
- Meanwhile, stir together hummus, lemon juice, dill, and garlic, adding water, 1 Tbsp at a time, until sauce is pourable but still thick. Serve sauce with chicken.
Side Dish Ingredients
- 6 cups chopped romaine lettuce
- 1 pint grape tomatoes, halved
- ½ cup chopped cucumber
- ½ cup halved kalamata olives
- ½ cup crumbled feta cheese
- ⅓ cup olive oil vinaigrette
Side Dish Instructions
- Toss together all ingredients in a large bowl.
