Easy Romesco Chicken

Ingredients

  • ½ lb boneless, skinless chicken breasts
  • ¼ tsp kosher salt, divided
  • ¼ tsp pepper, divided
  • 2 Tbsp olive oil, divided
  • ½ cup roasted red peppers, drained
  • 2 Tbsp sun dried tomatoes in oil
  • 2 cloves garlic, peeled
  • 2 Tbsp unsalted whole almonds
  • 1 Tbsp white wine vinegar
  • 1 tsp smoked paprika

Instructions

  1. Sprinkle chicken with ⅛ tsp each salt and pepper. Cook chicken in ½ Tbsp hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or until chicken is done.
  2. Meanwhile, process roasted peppers, sun-dried tomatoes, garlic, nuts, vinegar, 1½ Tbsp oil, paprika, and ⅛ tsp each salt and pepper in a food processor or blender until smooth.
  3. Serve chicken with sauce.

Side Dish Ingredients

  • 1 (8.5-oz) pouch microwavable seven whole grains mix
  • 2 cups baby arugula
  • ½ cup canned cannellini beans, rinsed and drained
  • ¼ cup thinly sliced red onion
  • ½ Tbsp olive oil
  • ½ Tbsp lemon juice

Side Dish Instructions

  1. Microwave grains according to package directions. Transfer to a large bowl; toss with arugula and remaining ingredients.
