Easy Romesco Chicken
Whole Grains, Cannellini, and Arugula Toss
Ingredients
- ½ lb boneless, skinless chicken breasts
- ¼ tsp kosher salt, divided
- ¼ tsp pepper, divided
- 2 Tbsp olive oil, divided
- ½ cup roasted red peppers, drained
- 2 Tbsp sun dried tomatoes in oil
- 2 cloves garlic, peeled
- 2 Tbsp unsalted whole almonds
- 1 Tbsp white wine vinegar
- 1 tsp smoked paprika
Instructions
- Sprinkle chicken with ⅛ tsp each salt and pepper. Cook chicken in ½ Tbsp hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or until chicken is done.
- Meanwhile, process roasted peppers, sun-dried tomatoes, garlic, nuts, vinegar, 1½ Tbsp oil, paprika, and ⅛ tsp each salt and pepper in a food processor or blender until smooth.
- Serve chicken with sauce.

- 1 (8.5-oz) pouch microwavable seven whole grains mix
- 2 cups baby arugula
- ½ cup canned cannellini beans, rinsed and drained
- ¼ cup thinly sliced red onion
- ½ Tbsp olive oil
- ½ Tbsp lemon juice
Side Dish Instructions
- Microwave grains according to package directions. Transfer to a large bowl; toss with arugula and remaining ingredients.
