Bacon-Baked Chicken

Ingredients
- 2 lb boneless, skinless chicken breasts, halved crosswise
- 2 Tbsp barbecue seasoning
- 1 (12-oz) pkg bacon
- 1 (8-oz) pkg shredded Cheddar cheese
Instructions
- Preheat oven to 400°F. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
- Rub chicken with seasoning; wrap each piece of chicken with 2 slices bacon. Place chicken on a lightly greased wire rack on a foil-lined rimmed baking sheet.
- Bake 20 to 25 minutes or until chicken is done and bacon is crisp. Sprinkle with cheese; bake 5 minutes longer or until cheese is melted.
Side Dish Ingredients
- 1 (22-oz) pkg frozen red potato wedges with olive oil and garlic
- 1 (15-oz) pkg frozen green peas
- 2 Tbsp butter, softened
Side Dish Instructions
- Cook potatoes according to package directions.
- Steam peas according to package directions; toss with butter until melted and season with salt and pepper, if desired.
