Easy Garlic Pasta
Roasted Asparagus and Carrots with HoneyIngredients
- 1 (16-oz) pkg spaghetti
- ½ cup olive oil
- 6 cloves garlic, thinly sliced
- ¼ tsp crushed red pepper
- 1 cup grated Parmesan cheese
Instructions
- Cook pasta according to package directions; drain, reserving 1 cup pasta water.
- Meanwhile, heat oil in a large, deep skillet over medium heat. Add garlic and red pepper; cook, stirring, 2 to 3 minutes or until garlic is golden brown.
- Add cooked pasta to skillet; toss. Add enough reserved pasta water until a creamy consistency is reached.
- Season with salt and pepper, if desired. Sprinkle with cheese.

- 1 (16-oz) bag baby carrots
- 3 Tbsp olive oil
- 1 lb asparagus, trimmed and cut into 1 inch pieces
- 1 lemon, halved
- 2 Tbsp honey
Side Dish Instructions
- Preheat oven to 400°F. Toss together carrots and oil on a rimmed baking sheet; spread in a single layer. Bake 12 minutes.
- Carefully stir asparagus into carrots. Bake 10 minutes longer.
- Squeeze lemon juice over carrot mixture; drizzle with honey. Season with salt and pepper, if desired.
