Easy Garlic Pasta

Roasted Asparagus and Carrots with Honey

Ingredients

  • 1 (16-oz) pkg spaghetti
  • ½ cup olive oil
  • 6 cloves garlic, thinly sliced
  • ¼ tsp crushed red pepper
  • 1 cup grated Parmesan cheese

Instructions

  1. Cook pasta according to package directions; drain, reserving 1 cup pasta water.
  2. Meanwhile, heat oil in a large, deep skillet over medium heat. Add garlic and red pepper; cook, stirring, 2 to 3 minutes or until garlic is golden brown.
  3. Add cooked pasta to skillet; toss. Add enough reserved pasta water until a creamy consistency is reached.
  4. Season with salt and pepper, if desired. Sprinkle with cheese.

Side Dish Ingredients

  • 1 (16-oz) bag baby carrots
  • 3 Tbsp olive oil
  • 1 lb asparagus, trimmed and cut into 1 inch pieces
  • 1 lemon, halved
  • 2 Tbsp honey

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together carrots and oil on a rimmed baking sheet; spread in a single layer. Bake 12 minutes.
  2. Carefully stir asparagus into carrots. Bake 10 minutes longer.
  3. Squeeze lemon juice over carrot mixture; drizzle with honey. Season with salt and pepper, if desired.
