Tex-Mex Pork Tenderloin

Smoky Mashed Sweet Potatoes and Green Beans

Ingredients

  • 2 (1-lb) pork tenderloins, trimmed 
  • 2 Tbsp Mexican seasoning
  • 1 Tbsp olive oil
  • 2 Tbsp honey
  • 1 Tbsp lime juice

Instructions

  1. Preheat oven to 400°F. Rub pork with seasoning.
  2. Cook pork in hot oil in a large ovenproof skillet over medium-high heat 4 minutes per side or until browned. Transfer skillet to oven.
  3. Bake 10 minutes or until a meat thermometer inserted reads 145°F. Let stand 5 minutes before slicing.
  4. Stir together honey and lime juice; drizzle over pork.

Side Dish Ingredients

  • 2 lb sweet potatoes, peeled and cubed
  • ¼ cup butter
  • ½ tsp ground cumin
  • 1 (12-oz) pkg frozen green beans

Side Dish Instructions

  1. Cook potatoes in boiling water to cover in a large Dutch oven 10 minutes or until tender; drain and mash to desired consistency with butter and cumin. Season with salt and pepper, if desired.
  2. Steam green beans according to package directions.
