Tex-Mex Pork Tenderloin
Smoky Mashed Sweet Potatoes and Green BeansIngredients
- 2 (1-lb) pork tenderloins, trimmed
- 2 Tbsp Mexican seasoning
- 1 Tbsp olive oil
- 2 Tbsp honey
- 1 Tbsp lime juice
Instructions
- Preheat oven to 400°F. Rub pork with seasoning.
- Cook pork in hot oil in a large ovenproof skillet over medium-high heat 4 minutes per side or until browned. Transfer skillet to oven.
- Bake 10 minutes or until a meat thermometer inserted reads 145°F. Let stand 5 minutes before slicing.
- Stir together honey and lime juice; drizzle over pork.
Side Dish Ingredients
- 2 lb sweet potatoes, peeled and cubed
- ¼ cup butter
- ½ tsp ground cumin
- 1 (12-oz) pkg frozen green beans
Side Dish Instructions
- Cook potatoes in boiling water to cover in a large Dutch oven 10 minutes or until tender; drain and mash to desired consistency with butter and cumin. Season with salt and pepper, if desired.
- Steam green beans according to package directions.
