Green Chile Rice

Ingredients

  • 1 cup diced onion
  • 2 Tbsp olive oil
  • 3 cups long grain white rice
  • 6 cups less sodium chicken broth
  • 2 (7-oz) cans diced green chiles
  • ¼ cup chopped fresh cilantro

Instructions

  1. Cook onion in hot oil in a large saucepan over medium-high heat 2 minutes, stirring often. Stir in rice and cook 1 minute.
  2. Add broth and green chiles. Bring to a boil; cover, reduce heat, and simmer 18 to 20 minutes or until rice is tender. Stir in cilantro; season with salt and pepper, if desired.
