Green Chile Rice
Ingredients
- 1 cup diced onion
- 2 Tbsp olive oil
- 3 cups long grain white rice
- 6 cups less sodium chicken broth
- 2 (7-oz) cans diced green chiles
- ¼ cup chopped fresh cilantro
Instructions
- Cook onion in hot oil in a large saucepan over medium-high heat 2 minutes, stirring often. Stir in rice and cook 1 minute.
- Add broth and green chiles. Bring to a boil; cover, reduce heat, and simmer 18 to 20 minutes or until rice is tender. Stir in cilantro; season with salt and pepper, if desired.
