Creamy Ginger Salmon
Brown Rice and Sesame Snow Peas
Ingredients
- 2¼ lb salmon fillets
- ½ tsp salt
- ½ tsp pepper
- ½ cup creamy peanut butter
- 2 Tbsp grated fresh ginger
- 2 Tbsp rice vinegar
- 1 Tbsp less sodium soy sauce
- ½ cup water
Instructions
- Preheat oven to 400°F. Place fish on a large baking sheet; sprinkle with salt and pepper. Bake 10 to 12 minutes or until fish flakes with a fork.
- Meanwhile, combine peanut butter, ginger, vinegar, and soy sauce in a small saucepan; cook over medium heat 2 to 3 minutes, stirring, until combined. Slowly add water, 2 Tbsp at a time, until sauce is smooth. Serve sauce with fish.

- 3 (3.5-oz) pouches boil in bag brown rice
- 2 (8-oz) pkg snow peas
- 3 Tbsp less sodium soy sauce
- 1 Tbsp sesame seeds
Side Dish Instructions
- Cook rice according to package directions.
- Cook snow peas according to package directions. Stir in soy sauce and sesame seeds.
