Creamy Ginger Salmon

Brown Rice and Sesame Snow Peas

Ingredients

  • 2¼ lb salmon fillets
  • ½ tsp salt
  • ½ tsp pepper
  • ½ cup creamy peanut butter
  • 2 Tbsp grated fresh ginger
  • 2 Tbsp rice vinegar
  • 1 Tbsp less sodium soy sauce
  • ½ cup water

Instructions

  1. Preheat oven to 400°F. Place fish on a large baking sheet; sprinkle with salt and pepper. Bake 10 to 12 minutes or until fish flakes with a fork.
  2. Meanwhile, combine peanut butter, ginger, vinegar, and soy sauce in a small saucepan; cook over medium heat 2 to 3 minutes, stirring, until combined. Slowly add water, 2 Tbsp at a time, until sauce is smooth. Serve sauce with fish.

  • 3 (3.5-oz) pouches boil in bag brown rice
  • 2 (8-oz) pkg snow peas
  • 3 Tbsp less sodium soy sauce
  • 1 Tbsp sesame seeds

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Cook snow peas according to package directions. Stir in soy sauce and sesame seeds.
