Beefy Egg Roll Bowls

Ingredients

  • 1 lb 93% lean ground beef 
  • 1 (8-oz) pkg sliced mushrooms
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 5 cups tricolor coleslaw 
  • 4 green onions, chopped
  • ⅓ cup coconut aminos
  • 4 tsp dark sesame oil
  • 2 tsp grated ginger
  • 2 tsp rice vinegar
  • 1 tsp Sriracha hot sauce
  • ⅓ cup chopped fresh basil

Instructions

  1. Cook beef, mushrooms, onion, and garlic in a large nonstick skillet over medium heat, stirring until beef is browned and crumbly. Drain and return to skillet. Stir in coleslaw and green onions.
  2. Whisk together coconut aminos, oil, ginger, vinegar, and Sriracha; add to skillet. Cook 5 minutes or until coleslaw wilts; stir in basil.
