Lemon Remoulade-Romaine Salad

Ingredients

  • 2 heads romaine lettuce
  • 1 pint multicolor grape tomatoes, halved
  • 1 (5-oz) pkg garlic and butter croutons, lightly crushed
  • ½ small red onion, thinly sliced
  • ½ cup fresh parsley leaves
  • 3 Tbsp white wine vinegar
  • 2 Tbsp mayonnaise
  • 2 Tbsp sweet pickle relish
  • 2 tsp whole grain mustard
  • 1½ tsp smoked paprika
  • ½ tsp garlic powder
  • 1 lemon
  • ⅓ cup olive oil
  • 1 green onion, minced

Instructions

  1. Separate lettuce into leaves and arrange on a serving platter. Top with tomatoes, croutons, red onion, and parsley.
  2. Whisk together vinegar, mayonnaise, relish, mustard, paprika, and garlic powder in a bowl. Grate zest and squeeze juice from lemon into vinegar mixture. Add oil and green onion, whisking until combined.
  3. Drizzle dressing over salad. Serve immediately.
