Chicken with Tomato-Caper Sauce

Ingredients

  • ¾ lb chicken cutlets
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1½ Tbsp olive oil
  • ½ onion, chopped
  • 1 clove garlic, minced
  • 1 (14.5-oz) can BPA free diced tomatoes, undrained
  • 1 Tbsp capers
  • ½ Tbsp honey
  • 2 Tbsp chopped fresh basil

Instructions

  1. Season chicken with salt and pepper. Brown chicken in hot oil in a nonstick skillet over medium-high heat 2 minutes per side or until done. Remove from skillet; keep warm.
  2. Add onion and garlic to drippings in skillet. Cook 5 minutes. Add tomatoes; bring to a boil. Reduce heat, and simmer 5 minutes or until mixture is thickened.
  3. Stir in capers and honey. Return chicken to skillet; cook 2 minutes or until thoroughly heated. Sprinkle with basil.

  • 2 (5-oz) pkg organic baby spinach
  • 2 tsp olive oil
  • 1 lemon
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook spinach in hot oil in a large nonstick skillet over medium heat just until wilted.
  2. Grate zest from lemon to equal ½ tsp; squeeze juice to equal 1 Tbsp. Stir lemon zest and juice into spinach; season with salt and pepper.
