BLT Fried Eggs
White Cheddar "Grits"
Ingredients
- 8 slices bacon
- 12 large eggs
- 2 cups baby arugula
- 1 cup grape tomatoes, halved
- 2 tsp red wine vinegar
Instructions
- Cook bacon in a large skillet over medium heat until crisp; drain. Place drippings in a small mixing bowl; set aside. Crumble bacon.
- Crack 6 eggs into hot skillet over medium heat. Cover and cook 2 to 3 minutes or until whites are set and yolks are cooked to desired doneness. Sprinkle with salt and pepper, if desired. Remove from skillet. Repeat procedure with remaining eggs.
- Combine arugula, tomatoes, and bacon in a large bowl. Whisk vinegar into reserved drippings. Drizzle over arugula; toss.
- Spoon White Cheddar "Grits" recipe into 6 bowls; top each bowl with 2 eggs and arugula mixture.
Side Dish Ingredients
- 3 (12-oz) pkg frozen riced cauliflower
- 1½ cups shredded white Cheddar cheese
- ¼ cup butter
- 1 tsp garlic salt
Side Dish Instructions
- Cook cauliflower rice according to package directions. Stir together cauliflower rice, cheese, butter, and garlic salt in a bowl.
