Caesar Salad with Tomatoes

Ingredients

  • 1 (18-oz) pkg mozzarella cheese raviloli
  • 2 (10.8-oz) pkg frozen corn, carrots, and asparagus 
  • ½ red onion, thinly sliced
  • 2 Tbsp olive oil
  • 1 Tbsp Italian seasoning

Instructions

  1. Cook ravioli according to package directions; drain, reserving ½ cup pasta water. Steam vegetables according to package directions.
  2. Meanwhile, cook onion in hot oil in a large, deep skillet over medium-high heat 5 minutes or until crisp-tender. Stir in seasoning.
  3. Add ravioli, vegetables, and enough pasta water to make a thin sauce. Cook, stirring often, 2 minutes or until thoroughly heated. Season with salt and pepper, if desired.

  • 1 (17.8-oz) Caesar salad kit
  • 1 pint grape tomatoes

Side Dish Instructions

  1. Prepare salad according to package directions in a large bowl; add tomatoes. Toss.
