Cheesy Ranch Chicken

Ingredients

  • 1 cup shredded Cheddar cheese
  • ⅓ cup mayonnaise
  • 1 Tbsp Ranch dressing mix
  • 2 lb boneless, skinless chicken breasts
  • 1 Tbsp olive oil

Instructions

  1. Combine cheese, mayonnaise, and Ranch in a bowl.
  2. Cut chicken in half crosswise and pound to an even thickness between plastic wrap using a meat mallet.
  3. Cook chicken, in batches, in ½ Tbsp hot oil per batch in a large nonstick skillet over medium-high heat 6 minutes. Turn chicken over, and top with cheese mixture; cook 6 minutes until chicken is done and cheese is melted.

Side Dish Ingredients

  • 1½ cups long grain white rice
  • 2 Tbsp butter
  • 1 Tbsp chopped fresh oregano
  • 2 (12-oz) pkg broccoli florets
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook rice according to package directions; transfer to a large bowl. Stir in butter and oregano.
  2. Cook broccoli according to package directions; add to rice along with salt and pepper. Toss.
