Cheesy Ranch Chicken
Herbed Rice and BroccoliIngredients
- 1 cup shredded Cheddar cheese
- ⅓ cup mayonnaise
- 1 Tbsp Ranch dressing mix
- 2 lb boneless, skinless chicken breasts
- 1 Tbsp olive oil
Instructions
- Combine cheese, mayonnaise, and Ranch in a bowl.
- Cut chicken in half crosswise and pound to an even thickness between plastic wrap using a meat mallet.
- Cook chicken, in batches, in ½ Tbsp hot oil per batch in a large nonstick skillet over medium-high heat 6 minutes. Turn chicken over, and top with cheese mixture; cook 6 minutes until chicken is done and cheese is melted.
Side Dish Ingredients
- 1½ cups long grain white rice
- 2 Tbsp butter
- 1 Tbsp chopped fresh oregano
- 2 (12-oz) pkg broccoli florets
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cook rice according to package directions; transfer to a large bowl. Stir in butter and oregano.
- Cook broccoli according to package directions; add to rice along with salt and pepper. Toss.
